You don’t need the drive-thru to get the crispy, juicy chicken sandwich everyone craves. This homemade version is golden and crunchy with the goodness of fresh milled flour. So good you’ll forget about the paper bag and waffle fries. Better than fast food, and definitely worth making at home.

Ingredients

  • 2 boneless skinless chicken breasts or thighs (whichever you prefer)

  • 1 cup pickle juice

  • 1/2 cup milk

  • 1/2 cup fresh milled flour (whatever variety you prefer)

  • 1/2 tsp garlic powder

  • 1/2 tsp smoked paprika

  • 1 tsp salt (to taste)

  • 1/4 tsp black pepper

  • 1 tsp sugar

  • 1 tsp cayenne pepper (optional for the spicy version)
    Oil for spraying, optional

Directions

  • Combine chicken with pickle juice and milk in a bowl and allow to marinate in the fridge for 30 minutes.
  • Combine flour and seasonings in a shallow bowl. In a separate bowl, combine egg and 1 tbsp of marinade and stir thoroughly.
  • Dip each chicken piece into the egg mixture, then into the flour and repeat.
  • For extra crispy chicken, use an oil sprayer and give each side a spray of oil
  • Spray the basket of your air fryer with oil or nonstick spray. Air fry at 400 for 15-18 minutes, flipping halfway through.
    Alternatively, bake in the oven at 425 for 20-25 minutes and broil the last 1-2 minutes for extra crunch.
  • The chicken is done when the thickest part reaches 165F.
  • Top with pickles, lettuce, and tomato (optional).
