Ingredients

  • 3 sticks high quality butter (or adjust for your desired servings)

  • Flaky sea salt, to taste

  • Roasted Garlic & Sage
  • 1 whole head garlic, roasted (To roast, cut off the top of garlic bulb, exposing cloves. Coat with olive oil, loosely wrap in aluminum foil and roast at 400F for 35-40 minutes)

  • 1-2 tbsp chopped fresh sage

  • Cranberry, Orange & Rosemary
  • 2-3 tbsp dried cranberries, roughly chopped

  • 1/2 tsp fresh rosemary, finely chopped

  • Zest of 1/2 an orange

  • Drizzle of honey, to taste

  • Lemon & Thyme
  • 1 tbsp thyme, chopped

  • Zest of 1/2 a lemon

Directions

  • Begin with very soft butter.
  • Roasted Garlic & Sage
  • Using a spatula or bench scraper, incorporate chopped sage into softened butter.
  • Spread on your board, creating texture with the back of your spatula or spoon.
  • Using very soft roasted garlic, spoon and spread over your herbed butter. Top with flaky sea salt to taste.
  • Cranberry, Orange & Rosemary
  • Incorporate chopped cranberries and finely chopped rosemary into your softened butter.
  • Spread on your board, creating texture with the back of your spatula or spoon.
  • Top with additional cranberries (if desired), orange zest, and drizzle of honey (if desired).
  • Lemon & Thyme
  • Incorporate chopped thyme into your butter.
  • Spread onto your board.
  • Top with zest of 1/2 a lemon (yellow part only, avoid the bitter white pith). Add flaky sea salt, if desired.
